thanksgiving is tomorrow!

i, more than anyone, realize we are not going to be home for thanksgiving dinner. thanksgiving is not only my favorite holiday because you get to eat a ton of delicious food, but you get to cook it, which is my favorite, and enjoy it with the ones you love.

we'll be alright though. we got a 12 pound turkey (lots of leftovers!), stove top stuffing (josh loves that stuff), i'll be making mashed potatoes, garlic steamed string beans, rolls and, yes, a pumpkin pie topped with whipped cream. for our cocktail, we'll be trying out a mulled red wine sangria.
i'll admit, it is going to be lonely making and eating all of this food, just the two of us. and it's going to be scary making a turkey all by myself for the first time and a pumkpin pie, something i've never done before either. but i love cooking and i enjoy this challenge. i hope one day i can have huge family feasts at mine & josh's home for the holidays.

i am definitely missing everyone back home. so far it's mainly felt like a vacation and then i remember i don't know when the next time i'll see any of my family members will be. it's all apart of the adventure, though. living in the moment, exploring a new city, it's been a blast. as a reminder, this is not forever, and if we don't get decent jobs or we just don't feel like being here anymore, we will be back in 6 months and call it the amazing experience it will be/has been. it shouldn't be something anyone is sad over, we haven't died, and you should come visit!! even though i'm a hypocrite with the sad part.. i just can't help my aching heart from missing everyone back home!

speaking of visiting, we can't wait to show you around & bring you to all of the fun places we've been to. last night josh and i were trying to decide what to have for dinner, since we don't have much food in the apartment. we wanted something cheap and tasty and we've heard nothing but good things about Maria's Taco Xpress so we decided to stop by. it was definitely all of the great things we've heard and more! we got a chicken fajita, al pastor, chips & salsa with a side of beans for 8$! the food was great and the set up of the joint was comfortable and fun. too bad the girl working at the counter didn't speak much english so we couldn't explore their happy hour, but it was still a great time.

jobs are unfortunately still up in the air. i have an interview monday at a daycare and i'm keeping my fingers crossed about that. once we're making money, any kind of money, things will feel more complete. until then, we'll keep ourselves cheaply entertained and continue applying!

enjoy your thanksgiving, family & friends. we miss you, we love you to death and we cannot wait to see you again.

i'll tell you the one thing i do not miss is the weather! today: 72 and sunny.

HAPPY TURKEY DAY!!! Miss you both, but believe me, there's not much happening here. The family has practically grown apart lately. Everyone is doing their own dinner. Mike and I are going to his mom's, but I'm really going to miss our mom's juicy turkey and milky good mashed potatoes. :( We bought a tofurkey to make a big meal of our own for next week after all the parties are over. Let you know how that goes. Your dishes sound delicious--enjoy that sangria too!
